When olive is picked up from the tree it is far bitter to eat, but you know that this bitterness is so amazing for your health ! This bitterness is due to antioxidants- Tocopherol and Polyphenols respectively. Antioxidants contributes many health benefits.

COOKING WITH OLIVE OIL

As we all know that olive oil is extremely healthy oil,but there is a myth associated with olive oil that it cannot be used for cooking, as at high temprature it is not stable and loss of nutrient takes place,but this is not the truth.The cooking of the oil depends upon smoke point and oxidative stability of the oil.
i)The smoke point-Is the temprature at which the fats begin to break down and turn into smoke.
ii)Oxidative stability-Is how resistant the fats are to reacting with oxygen.
Fatty acid are of three types-saturated,monounsaturated fatty acid and polyunsaturated fatty acid.Olive oil mostly contain monounsaturated fatty acid which are more stable,however the unstable polyunsaturated fatty acid in olive oil is only 11%.Moreover it contains polyphenols and tocopherols which protect the oil from oxidation and hence maintain there stability.
The smoke point of olive oil is  (410ºF) 210ºC  which is greater than the ideal temprature used for frying the food i.e.(356ºF) 180ºC.As long as the oil kept below the smoke point the flavour and nutrition will remain intact.So,olive oil can remain stable at high temprature and can be used for cooking.

Today I like to share some important information regarding the olive oil production,while just  reading about olive oil, I came across the fact -That the Mediterranean basin is considered to be the hub of olive oil production.Now a days with growing awareness and increased concern for health hazard the demand of healthy olive oil is increased.
Spain is considered to be the largest manufacturer of olive oil. Spain's production has been estimated at 600,000 tons,putting Spain at Ist position despite its poor olive harvest.While many producers in Europe including Italy and Spain has experienced bad harvest,because of poor weather and olive fly infestation.Tunisia has increased fourfold making it the second largest producer after Spain with this year’s yields estimated at 280,000 to 300,000 tons, a 400 percent increase from last year’s figure of 70,000 tons.

1.In order to produce one quart (32 ounces) of Extra Virgin Olive Oil, 11 pounds of olives need to be pressed.
2.One liter of olive oil is produced from the pressing of seven liters of olives.
3.Baked goods will last longer when you substitute olive oil for butter. It is the vitamin E and polyphenols that causes this longer shelf life.
4.Olive oil is technically a fruit juice and the olives are pressed much like an orange or lemon .
5.The fresher the olive oil, the better the taste.  
6.Olives cannot be consumed directly from the tree. Harvested olives need to be processed with brine before they become tasteful. 
7.Extra virgin is the highest quality and most expensive form of olive oil. It comes from the first pressing. It is the least acidic oil, with a strong olive aroma and fresh fruity flavor.

 Cabbage -1 cup
Capsicum - 1 cup
Cucumber - 1 cup
Lettuce - few leaves
Tomato - 2 (medium sized)



For the dressing -

Salt and Black pepper powder as per your taste
Lemon juice - 2 tbsp

Method-

BEAN VEGGIE SALAD

Here comes a very healthy recipe,which have the contains soft kidney beans mixed with crunchy vegetables makes a perfect combination of taste and nutrition.
Ingredients:-
3/4 cup soaked and boiled kidney beans
1 cups shredded cabbage
1 cup grated carrot
1/2
cup sliced capsicum

Dressing:-
2 tbsp white vinegar
2 tbsp powdered sugar
2 tbsp olive oil
1 tsp mustard powder
salt to taste
Method:-
1.Combine the ingredients in a deep bowl and toss well.
2.Just before serving, pour the dressing on top and toss well.
3.Serve immediately.

QUICK SALAD DRESSING


Herecomes the very simple salad dressing recipe using olive oil,Just put all the ingredients togather mix it,ready to serve.It's a healthy recipe and very easy to make.

For dressing :

  • Take 8 cloves garlic,finely chopped
  • Black pepper (half teaspoon)
  • Salt(as per your taste)
  • Half cup extravirgin oil
  • One cup freshly squeezed lemon juice
    1.Take a container having tighten lid,put all the ingredients in the container,place the lid and shake vigorously so that the lemon juice and olive oil blend.
    2.Now spread the dressing over spinach ,lettuce or any shredded salad greens.

It's quite long since olive oil is used in baking products in the area where is grown(Mediterranean cooking) .Normally we are using butter or margarine in our baking needs ,as it is believed that strong taste and thick texture make olive oil less desirable for using in bakery products.Recently, I tried a cake made by using olive oil instead of butter and  it was yummy..!! beleive me there is very minor difference in taste and in fact the texture was also very light.If we use olive oil in bakery not only it cuts the cholesterol but saturated fat also.Olive oil is rich in vitamin E, maintain freshness of product and create moist bakery product.
But still if you are finding strong flavour by using extravirgin olive oil this problem can also be solved by using extra light olive oil :)

I know you people think that I am crazy, when I say, just swishing oil in mouth not only help in improving oral health ,but also helps in treating various ailment. Seafood Linguine With Pristiano Madrid Olive Oil and Tomatoes



Ingredients:
  • 1 lb linguine
  • 8 pcs medium-sized squid - cleaned, innards removed and cut into rings
  • 12 pcs. shrimps, peeled, deveined, and halved lengthwise
  • 12 pcs. mussels, cooked and shells removed
  • 1 14-oz can diced tomatoes
  • 1 head garlic, minced
  • ½ cup fresh Italian parsley, chopped
  • 2 tsp celery salt
  • ½  tsp blackpepper
  • ½ cup finely shredded parmesan cheese for topping
  • 4 Tbsp Pristiano Madrid Olive Oil
  • 2 Tbsp salt for cooking pasta 
  • whole fresh parsley leaves for garnishing

Procedure:
1. Bring 3-4 quarts of water to a boil over medium-high heat, add 2 Tbsp salt and stir in the pasta. Cook until al dente, approximately 10 to 12 minutes. Drain the pasta well.
* Remember  that the secret to a good pasta is to cook it in plenty of water to avoid sticking. Adding oil to the pasta water can prevent sticking, but pasta that's cooked in oily water will become oily itself and, as a result, won't absorb the sauce and you'll have a flavorless pasta.
2. In a large skillet, sauté garlic until light brown. 
3. Add shrimps, squid and mussels. Saute just until shrimps turn pink, about 3 minutes.
*  Be sure not to overcook the shrimps! Shrimps when overcooked will shrink and shrivel and will be all tough and stringy.
4. Add chopped parsley and tomatoes (including the juice from the can). Simmer for 5 minutes. Add celery salt and pepper. Mix well.
5. Add pasta. Toss just until the pasta is covered with the mixture. Remove from heat. Let sit for about 3 minutes to let the pasta absorb the sauce.
6. Divide into four equal servings. Sprinkle with shredded parmesan cheese and garnish with parsley.
7. Serve and enjoy!





Vegetable Briyani with Pristiano Olive Oil



Ingredients:
2 cups Basmati Rice 
1 cup Mixed Vgetable (cauliflower, potato, carrot, french beans)
150 gms Green Peas
3 Finely Sliced Onion
2 Finely Sliced Green Chillies
Salt to taste
1 tsp Red Chilli Powder
2 tsp Cinnamon(dalchini), Caraway Seeds(zeera)
4 Cloves (laung)
1/2 tsp Black Pepper Powder
4 Tomato
1/2 cup Yogurt (curd)
4 tbsp Pristiano Madrid Olive oil Oil
1/2 tsp Mustard Seeds
3 tbsp Dry Fruits (cashew nuts, raisin)

Method:
Wash the basmati rice well before cooking.Then take rice with 3-3/4 cup water and a little salt added to it and 2 tbsp of dry fruits.Cook it in pressure cooker or in a pan or microwave.

Cut all the vegetables into small thin pieces and fry each one of it separately in oil. Fry the green peas also.

Take 1 tblsp oil in a pan and add mustard seeds, green chilli, cinnamon and caraway seeds powder, cloves, black pepper powder and stir for about half minute. Then add onions and saute them for a minute ot till they get pink in color.

Add salt and red chilli powder and stir.

Add fine chopped tomatoes and fry till they are properly cooked.

Take the yogurt and make it fine by putting in a blender for just 2 rotations. Add this fine yogurt and stir well.Heat it for about 10 seconds.

Add all the fried vegetables.

Add the cooked rice and mix well with very light hands so that the rice grain doesn't break. Cook for about 3 minutes.

Take this vegetable biryani out in a rice serving dish. 


Garnish with dry fruits and green coriander leaves.

Serve the vegetable (veg ) biryani hot with raita and pickle.
