If you taste the extra virgin olive oil you will notice a unique tart flavor ,this flavor is contributed by the phenolic compound present in it.The polyphenols have many health benefits,it possess antioxidant properties which is not only good for our health but also good for olive oil as polyphenols protect oil prevent oxidation of oil and hence increase its shelf life.
In contrast to other oils the virgin olive oil is consumed in unrefined stage hence polyphenols remains intact in it,while in other oils it is lost in process of refining.Besides having antioxidant properties olive oil also possess anti-inflammatory properties and hence helps to fight against cancer.
